Easier, Breezier, (Less Fattening Too!) Eggs Benedict … For Mother’s Day or Anytime!

The secret to this recipe is definitely in the sauce! Trader Joe’s has just come out with Hollandaise Sauce in a jar No more fretting over curdled sauce or salmonella poisoning. Just heat and serve. It tastes delicious and better yet, it only has 35 calories per tablespoon.

The next secret to this is – it’s vegetarian! The traditional Canadian Bacon is replaced with a couple of slices of avocado and tomato.

Here’s the recipe from beginning to delicious end: (Serves six)

3 whole grain English muffins from Trader Joes
1 cup Trader Joe’s hollandaise sauce
1 large avocado, sliced
2 medium tomatoes
6 eggs
¼ cup white vinegar

Split and toast English muffins and lightly brush them with butter. Slice tomatoes and avocados. Heat 1 cup hollandaise sauce in microwave for 45 seconds or until hot. Half fill a quart sized sauce pan with water and add vinegar; bring to a boil. Stir water and pour cracked, whole eggs into water funnel. Turn heat down to simmer and cook until whites are set. (1 – 2  minutes or until center is cooked to your liking.)

While they’re cooking, assemble the muffins, tomato, and avocado. When eggs are done remove with a slotted spoon and rest on a paper towel briefly to remove excess water. Place eggs on top of tomatoes and top with hollandaise sauce and seasonings.
