Grilled Vegetables with Truffle Oil

Truffle Oil is one of my "cannot live withouts" ... It's comprised of extra virgin olive oil that has been infused with either black or white truffles. The white truffle oil is a little stronger and more garlicy, but they are both fabulous and you can use them in most receipes that call for olive oil.

For grilled vegetables, drizzle a little truffle oil on assorted peppers, aparagus, sliced eggplant, radicchio, summer squash & zuchinni, or whatever other fresh summer vegetables you like. Toss until throughly coated. Finish with a dash of Coastal Medditeranean Sea Salt, another one of my "cannot live withouts".

Toss the vegetables until they are totally covered and then grill until lightly charred. (Use a grilling basket for best results).

There are a million other uses for truffle oil; try drizzling a little over hot soup, as a base for salad dressings; a little bit is all you need - it's packed with flavor!

You can get truffle oil at Dean & Delucca for around $39 a bottle, or go to Trader Joe's and get the same thing for $9.99 a bottle. Frankly I can't tell the difference.
